With his Triple Karmeliet beer without alcohol 0.4%, AB-InBev takes a big hit on zinc by marketing an alcohol-free version of Triple Karmeliet, containing more precisely 0.4% alc.vol., while the original recipe contains 8.4%. This shows that respect for the most established traditions is no longer required by the world's leading brewing group.
This refreshing alcohol-free version gives you the unique taste of Tripel Karmeliet, velvety and delicate, carried by the refined balance of the three grains: barley, oats and wheat.
But how could such a “miracle” have been achieved? While using the same ingredients as the recipe created in 1679 by the Bosteels brewery, i.e. barley, wheat and oats as well as a mixture of spices, the process used is based on a so-called “intelligent” yeast developed at Global Innovation & Technology in Louvain. It would only ferment simple sugars (glucose and fructose) but not the most complex ones (maltose and maltotriose), resulting in “a minimal production of alcohol, while allowing complete fermentation and rich aromatic development” according to the group’s press release.
