Alcohol-free champagne or dealcoholized sparkling wine: what’s the difference?
Technically, the "Champagne" appellation is protected and reserved for alcoholic sparkling wines from the Champagne region - a "non-alcoholic champagne" in the strict sense therefore does not legally exist. What we commonly call "non-alcoholic champagne" actually refers to a dealcoholized sparkling wine, produced using a similar method (sometimes a truly traditional method) then stripped of its alcohol by reverse osmosis or vacuum distillation.

Does non-alcoholic champagne really have bubbles?
Yes, the second fermentation or controlled carbonation preserves the effervescence — only the alcohol is removed after production.
Can you serve non-alcoholic sparkling wine at a wedding without it being obvious?
Absolutely: color, bubbles and packaging are identical to a classic champagne. Most of your guests won't be able to see the difference.
What serving temperature?
Between 6°C and 8°C, like a traditional champagne, served in a flute to preserve the bubbles.
How long does it last after opening?
1 to 2 days in the refrigerator with an airtight cap — the effervescence subsides more quickly than a classic champagne.
