Specificities: The elimination of alcohol occurs in a very careful manner in a vacuum (airless space inside) and is certainly gentler than any other process
extraction.

The process allows for very gentle extraction at temperatures significantly below 30° Celsius, so
that thermal damage cannot occur.
The wine is heated up to 29°C, when the alcohol reaches its boiling point it begins to evaporate.

This procedure occurs in just a few minutes and is therefore very effective. The system used is computer controlled and ensures optimal and correct extraction of alcohol.
