Antidote: A unique drink born from the vine and intuition

For more than 20 years as a winemaker, I have sometimes felt frustrated: sharing a friendly moment with friends, but not being able to drink wine for various reasons. Too early in the morning, responsibilities like driving, caring for children, or simply the desire to be fully present at an appointment.

This reflection led me, 15 years ago, to create a light natural sparkling wine (Petit Coin de Paradis - 6% alcohol) and to explore different paths of balance in my creations. Quickly, the idea of ​​an alcohol-free juice, less sugary and shareable with my own children, emerged.

Inspired by biodiversity and my habit of harvesting wild flowers and herbs, I imagined combining grape juice with herbal infusions. What grows naturally between the rows of vines, often considered "weeds", has become a valuable asset in this project. What a great way to change perspective!

Since 2010, I have had fun combining juices and infusions. But something was missing: bubbles, this element which brings a touch of lightness and celebration. This is how I began to collaborate with Philippe, a bubble and apple specialist, to enrich this vision.

Each year, Antidote is designed like a wine: with attention and search for balance between acidity, sugar, bitterness and bubbles. He is guided by intuition and the desire to create an authentic and joyful drink.

Taste profile
Color: A luminous and radiant shade, reminiscent of the freshness of freshly squeezed fruit.

Nose: An explosion of floral and herbaceous aromas, combining the delicacy of thyme and rosemary with the liveliness of lemon and a spicy hint of ginger.

Mouth: A lively and refreshing attack, carried by perfectly balanced acidity. Fresh fruit flavors blend harmoniously with herbal infusions like basil and chamomile, providing a subtle, soothing complexity. Domaine des Grottes
Since 2002, Romain des Grottes and Perrine Stas have been cultivating Domaine des Grottes biodynamically, 6.5 hectares of vines and 2 hectares of cereals in the heart of Beaujolais. In organic farming and labeled Demeter, the estate promotes wild herbs growing between the rows of vines, integrating them into juices mixed with homemade herbal teas. A joyfully subversive approach that transforms what was perceived as harmful into natural and sensory wealth.
