THE REVEAL PROCESS
WINE 0.0%
Central point of the winemaking philosophy of La Cuvée Vintage 2023, the process of revealing the 0.0% wine involves the most demanding attention paid to the wine before its dealcoholization, and this from the vine, in order to ensure the complexity of its aromas and flavors.

Rodolphe Frerejean-Taittinger, CEO and in charge of R&D, oversees winemaking using his decades of expertise in Champagne and Cognac. This innovative approach emphasizes wine quality well before the dealcoholization process, reshaping the principles of winemaking and expanding its horizons.

IT ALL STARTS AT THE VINE
So that the aromas, flavors and complexity exceed the expectations generally required in the production of a wine, nothing was left to chance in the act of creating La Cuvée Vintage 2023 Blanc de Blancs. It all started with a careful selection of our organic grapes from the Chardonnay grape variety in Languedoc. Coming from plots located at the top of the hillsides, these grapes are able to promote good concentration and greater complexity of aromas.

Each opus of La Cuvée Vintage Blanc de Blancs will be unique, revealing a free and personal interpretation of the year. French Bloom has chosen the year 2023, a solar vintage of exceptional quality.

AGING IN FRENCH OAK BARRELS
After their harvest, the grapes are pressed in order to preserve only the clear wine, a large majority of which is left to age in new 225 liter oak barrels and the other part in stainless steel vats, for more than six months. This stage of aging is also crucial in the process of revealing the 0.0% wine in order to reinforce the concentration as well as the aromatic and taste complexity of La Cuvée Vintage 2022.

AT THE FOREFRONT OF INNOVATION IN DEALCOHOLICATION
The wine dealcoholization stage is essential, carried out in France, vacuum distillation at low temperature with recovery of the original aromas of the wine is the most recent and most innovative. It allows the alcohol to be carefully removed from the wine at 0.0%, while preserving its complex aromas which are reinstated after distillation. The final product thus retains the profile and character of the wine defined beforehand in order to offer a unique tasting experience to wine lovers.

MAGGIE FREREJEAN-TAITTINGER & CONSTANCE JABLONSKI
Long-time friends, Maggie & Constance lived on opposite sides of the Atlantic, and met again in Paris in 2019. Maggie was Director of the Michelin Guide and pregnant with her twins. Constance continued her career as a top model, and was driven by a quest for well-being against all odds.
During gatherings with friends and family, they realized how non-alcoholic, festive and sophisticated drinks were non-existent.
This is how the idea of ​​French Bloom appeared.
