How is a non-alcoholic spirit made?

Two approaches dominate the market. The first involves distilling plants, barks and spices in water rather than alcohol — the method used by references like Botaniets or JNPR. The second consists of producing a real spirit then extracting the alcohol by vacuum distillation, as is done Sober Spirits from its Savoyard distillery: we thus retain part of the structure and aromas of the original spirit.
