THE STORY STARTED IN HIS KITCHEN...
Step 1: Learn the art of distillation from scratch and create amazing cooking recipes. The whole story began with a tour of the world of spirits which allowed Calixte to establish a complete map of the aromas and flavors that he wanted to find in Sober Spirits products. Then, Calixte bought a small distiller so that he could learn everything from scratch about the art of distillation and thus succeed in creating “homemade” recipes, in his kitchen!
Equipped with pipettes, syringes, a bit of madness and a list of ingredients to test with the still, to taste and compare, Calixte had only one objective: to create the best alcohol-free alternative for cocktails. And we had to show ingenuity...

FROM A TRUE SPIRIT TO VERSION 0.0
Step 2: Break the codes and innovate where no one has ventured! Calixte started with a simple principle: “If we want to create REAL alternatives to spirits, why not start with REAL spirits?”. Thus, at the heart of Sober Spirits' DNA was born what would be its greatest strength and which differentiated them from all competitors: alcohol extraction. Let's take the example of SoberRum 0.0%, our alternative to alcohol-free rum: after a first distillation of a real French Caribbean rum, coming out of a still at 70 degrees, this rum is imported to Grasse (world capital of perfumes), in the south of France, where the famous extraction of the alcohol will take place. Extraction is a technique for separating the elements that make up the spirit after distillation. It allows, among other things, by heating, a pressure and thermal shock system, to separate the taste (which we recover for our range of Sobers 0.0% spirits) and the pure ethanol. This extraction is very complex and expensive because we only recover very little of the raw material that interests us in Sober Spirits products after the extraction. On the other hand, ethanol is recycled in the fine perfumery industry.

BUT WE HAD TO GO EVEN FURTHER IN TECHNIQUE
Step 3: Complete the flavors to create a cocktail. The extraction of the recovered alcohol was still impressive, but it lacked a little panache and it was necessary to go even further. In addition to what makes up the DNA of Sober Spirits, Calixte wanted to complete with different infusions, macerations or complementary distillations depending on the products in the range in order to provide more body, intensity, finesse as well as additional aromatic complexity thanks to the use of different plants, barks & fruits allowing you to appreciate an uncompromising cocktail experience with each sip. It was only after 2 years of R&D, several hundred distillation tests, the creation and adaptation of new alcohol extraction techniques, infusions and many questions about technical feasibility that we managed to invent Sober Spirits.

TRADITION AT THE HEART OF R&D AND INNOVATION AT THE SERVICE OF TASTE
Step 4: Adapt the “cooking” recipe into a high volume recipe.
Our passionate master distiller, with his know-how, now develops the entire Sober Spirits range according to a secret process that we have implemented through dozens of full-scale tests before arriving at the finished products. This production process lasts several days and involves nearly half a dozen different techniques, the two main ones being alcohol extraction and distillation in copper stills that are more than a century old. Our technical expertise, control of the duration of the process and heating temperatures as well as the selection of suppliers allow us to exploit the full aromatic potential of the raw materials, key to the success of the Sober Spirits range and experience.
