The elimination of alcohol occurs in a very careful manner in a vacuum (airless space inside) and is certainly gentler than any other process
extraction.

The process allows for very gentle extraction at temperatures significantly below 30° Celsius, so
that thermal damage cannot occur.
The wine is heated up to 29°C, when the alcohol reaches its boiling point it begins to evaporate.

This procedure occurs in just a few minutes and is therefore very effective. The system used is computer controlled and ensures optimal and correct extraction of alcohol.

Derived from the coat of arms of the capital Berlin, the Baer is probably one of the most famous monuments in Germany, if not the best known. From his hometown of Berlin, Hans Baer cycles around the world on his cool bike. He selected Rheinhessen wines from his luggage.

The largest of Germany's wine-growing regions is known for its diversity – not only in terms of grape varieties, but also in the structure of small and large wine companies. Rheinhessen is probably one of the most dynamic regions in Germany. A young, modern generation of winegrowers trusts tradition, but frees itself from old constraints and transforms Rhenish Hesse into a modern and varied region, on the way to a fascinating future of viticulture.
