A procedure for revolutionary quenchoolization
In the demanding universe of wine, where authenticity and excellence are unwavering pillars, Majolia is distinguished by a daring and innovative approach: the bleakness of Gamay. A daring bet that preserves the soul of wine, while reinventing the art of tasting it.
Disalcoolizing a wine without distorting it is a challenge that little successfully take up. Majolia brilliantly points to it by relying on a three -step process, without recourse to chemistry. Far from the aggressive methods which alter the taste of wine, the technique selected by Majolia ensures optimal preservation of the aromas and the original structure of Gamay.

3 -step process
1. Vacuum distillation
The wine is smoothly heated to a controlled temperature from 28 to 32 degrees. This process makes it possible to extract alcohol while protecting the aromatic integrity of wine. Unlike conventional techniques that use high temperatures and are likely to burn delicate aromas, this vacuum approach allows smooth evaporation, thus preserving the richness of Gamay.

2. Recovery of aromas
The original aromas of Gamay are carefully captured in the distillate thanks to a special resin, before being reintroduced into wine. This adsorption process, completely free of chemicals, guarantees a faithful restitution of the aromatic bouquet, where the fruity and floral notes of the Gamay fully flourish.

3. Harmonization
Before bottling, a shipping liquor is added to refine the taste balance of the wine. Composed mainly of rectified concentrated grape must (MCR), it allows you to adjust the texture and the liveliness of the wine, while guaranteeing a low sugar content. The result? A thirst gamay vibrating with aromas and perfectly structured.
