A REVOLUTIONARY DEALCOHOLICATION PROCESS
In the demanding world of wine, where authenticity and excellence are unshakeable pillars, Majolia stands out with a bold and innovative approach: the dealcoholization of Gamay. A daring bet that preserves the soul of wine, while reinventing the art of tasting it.
De-alcoholizing a wine without denaturing it is a challenge that few successfully tackle. Majolia tackles this brilliantly by relying on a three-step process, without the use of chemistry. Far from aggressive methods which alter the taste of the wine, the technique selected by Majolia ensures optimal preservation of the aromas and original structure of Gamay.

3-STEP PROCESS
1. VACUUM DISTILLATION
The wine is gently heated to a controlled temperature of 28 to 32 degrees. This process allows the alcohol to be extracted while protecting the aromatic integrity of the wine. Unlike traditional techniques which use high temperatures and risk burning delicate aromas, this vacuum approach allows for gentle evaporation, thus preserving the richness of Gamay.

2. RECOVERY OF FLAVORS
The original aromas of Gamay are carefully captured in the distillate using a special resin, before being reintroduced into the wine. This adsorption process, completely free of chemicals, guarantees a faithful restitution of the aromatic bouquet, where the fruity and floral notes of Gamay fully blossom.

3. HARMONIZATION
Before bottling, an expedition liqueur is added to refine the taste balance of the wine. Composed mainly of rectified concentrated grape must (MCR), it makes it possible to adjust the texture and liveliness of the wine, while guaranteeing a low sugar content. The result? A dealcoholized Gamay vibrant with aromas and perfectly structured.
