Who is this baron?
If the owner of the Moulin dawn at the bottom of the rocks was the count of Fourmetraulx, the miller François Dazin, by his disdainful character, inherited the nickname of Marquis. It was not without humor that the owner of the neighboring Estaminet called his establishment "Au Baron". The Count, the Marquis and the Baron formed the new trinity of the background of the rocks. Dazin left the former Bonaparte soldiers to call his son "Napoleon". We were in full restoration under the Second Empire!
François Dazin bought Count Anthime of Fourmetraulx, Le Moulin in 1853.
In 1861, he covered his case to his desired son who built alongside the flour mill, marble workshops then stopped grinding and launched himself like Monsieur le Comte in marble. After 76 years of service, the old wooden wheel ceased to turn the flour of the villagers to grind. It will give the daily bread for 71 years to dozens of families of marbriers and polisters.

A family story
When the café "Au Baron" still watered the mosaist workers, marble tailors and polismers, the yawns, fattern brewers and current operators of the baron brewery are still on the other side of the border, but they are already at work on the brewing tanks, and more particularly that of the cavenaile brewery in Dour. Indeed, Désiré Bailleux, Maître Brasseur renowned has been in his art since 1879. His grandson Roger will join the company after studying fermentation at the Meurice Institute in Brussels. In the brewer's house installed in the courtyard of the brasserie born his 2 children, Alain and Martine.

Roger will undergo the wrath of brewing industrialization and will see the closure of the brewery, he will then leave with woman and children to the Belgian Congo to join the Katanga brewery. Following the declaration of independence of the colony, he will join the Brasserie Barré in Valenciennes. Talented and carried away in the frantic development of the sector, he found himself factory director at Kanterbraü in Nantes and then Sochaux. He will be forced to dismantle these 2 factories in the name of the concentration of production tools. Roger then finds himself a young retiree and definitively moved to his country house in Gussignies, nostalgic for the authentic era of the brasseries of yesteryear.

It was in 1973 that the adventure of the "Au Baron" brasserie began. Alain Bailleux then acquired the last village bistro just in front of his parents' house. He meets Danielle who will become his wife. Together, they embark on catering. Faced with success, they are building a restaurant room or will be prepared there succulent grills over a wood fire in an old brasserie tank, recovered by Roger at Kanterbraü. But the adventure does not stop there ...

Later, Alain and his father Roger challenge himself: create an artisanal brewery, with beers that smell of cereals and yeast, like those that Roger brewed at the start of his career.

It will be done on June 8, 1989 when Gussignies inaugurated the village brasserie with Saint-Médard, a beer inspired by the braslines of yesteryear. The following spring, while the undergrowth is adorned with yellow flowers, the rush of the daffodils leaves the tanks.
In recent years, Florence and Xavier have taken over the reins of the family business and continues to have the baron prosper by developing the restaurant and the brasserie respectively and by annexing a local shop where you can buy the beers and products from local producers.
